Hey there!
I’m Dim. I'm a guy, a husband, and a dad who happens to write about food and cooking.
I learned to cook from my great-grandma before I was even tall enough to peek over her cast iron stove. According to my mom, I’ve been handling kitchen knives since I was three, much to the horror of her book club friends. "I knew you were too smart to hurt yourself," she always says. (Moms have that ability, you know, to make you feel like you can move mountains.)
For many years, cooking was just a hobby. Then the pandemic came, and I had an epiphany moment about how I wanted — and didn’t want to — spend my time. So I quit my comfy Fortune 500 job to cook and write about food. I picked up culinary training online. Got a bunch of food safety certificates. Started a blog. Wrote a cookbook. The "usual." Looking back, I have no doubt it was one of the best decisions of my life, though I won’t lie, I do miss the corporate credit card and the lifestyle that came with it sometimes.
Now here I am, on Medium, dishing out recipes and teaching others how to sear steak and roast turkey.

Home-cooked food isn’t just better for you than fast food or takeout. It's so much more than that. For me, at least, cooking is love, care, devotion — and that holds true even if you’re the only one eating! It’s also incredibly rewarding ... once you’ve gotten good enough at it.

I started writing on Medium to bring you my absolute best recipes and cooking guides so you can make meals tastier than those at your favorite restaurant, all in the confines of your kitchen.
I’m talking easy, affordable, and delicious recipes that coax so much flavor out of a handful of ingredients, with so little fuss and washing up, it’s downright ridiculous. Regular readers know what I'm going on about.

Cookbooks (I have one too!), YouTube cooking channels, and food-themed email newsletters can be found left and right. But here’s the shtick: TV chefs and cookbook authors get you to blindly follow along and leave you hoping that your meal's going to turn out okay without teaching you any of the fundaments behind their recipes!
I like to think that my stuff's different.
Not only do I give you ideas about WHAT to cook, but I help you figure out HOW to cook it well — really well — whether with or without a recipe.
Think of my stories as the fragments of a cookbook and a reference guide in one. The kind that gets you to say “HA! I didn’t know that!” all the time and keeps you kind of glued to the screen. (Just don’t say I didn’t warn you.)
